Falooda: A Delicious and Refreshing Drink from India
Served as a cold drink to cool off during summers or as an ice cream alternative, it looks really good with the toppings, and the taste is even better! It is called by different names in different countries, one of which is ‘Aloodah’.
Falooda is yet another culinary success brought forward by the Moghuls. It is a mark on the Persian legacy of grand dishes of food. It dates back to as old as 400 BC, apparently called ‘Faloodeh’ then.
The original version was a dessert made of cornflour vermicelli noodles with a cold, semi-solid syrup to complement its taste.
Ingredients Required:
- a) 2 teaspoons of basil seeds
- b) 1 cup of Falooda sev or vermicelli for topping the drink
- c) 2 cups of fresh milk
- d) 2 tablespoons of white sugar or sweeteners
- e) 2 split cardamoms
- f) 2 tablespoons of rose syrup for the essence
- g) 2 scoops of vanilla ice cream
- h) 2 tablespoons of crushed toasted pistachios or almonds
- i) Rose petals for garnishing
Instructions –
Step 1 – First, mix the milk, sugar and split cardamoms in a pan and boil it, while keeping a close eye on it, as it will rise. Let the milk simmer for about 15 minutes before scooping out the skin of the cardamom.
Step 2 – Pour the milk into a clean bowl or a jug and let it sit for a while.
Step 3 – Then, keep the jug in the refrigerator for about four hours to properly chill it. Meanwhile, soak the basil seeds in normal water for about two hours.
Step 4 – To make the sev or vermicelli soft, cook it in simmering water for about five to seven minutes. Then, drain the water and keep it aside. Now, we have to add all the ingredients to get the drink ready.
Step 5 – First, place a teaspoonful of basil seeds into each glass, and top it with half portion of vermicelli in each. Add rose syrup of about a tablespoon in each glass. Then, gently pour the milk into the glass, until it fills about three-fourth of the glass.
Step 6 – Add a scoop of vanilla ice cream in each glass and then garnish it with nuts and petals.
Step 7- Serve immediately to enjoy the Falooda in its best taste.
Happy summers!
