Kashmir is the northernmost region of India which is called as the heaven for its deep sloppy mountains, narrow valleys and beautiful nature and scenic beauty. Kashmir is heaven not only referring to its beautiful landscapes but also for its food.
Kashmir is famous for its mouth-watering cuisines. It is the best place for meat lovers as Kashmir is famous for its meat cuisines. Kashmiri people cook mutton in more than 30 different ways. The food here signifies the touch of Mughals and Arabs tradition of food.
The main cuisine for Kashmir is Tabak Maaz Kashmir. It is one of the most vibrant, loved and popular snacks of Kashmir. This dish is prepared mainly using lamb ribs, milk, and ghee. It is one of the most loved non-vegetarian cuisines of Kashmir.
Ingredients :
A) Lamb ribs – 500 gms
B) Cloves – 5 to 6
C) Elaichi – 3 to 4
D) Dry ginger powder – ½ tsp
E) Zeera – 1tsp
F) Turmeric powder – 1tsp
G) Red chilli powder – 1tsp
H) Salt to taste
I) Ghee – ¼ cup
Cooking Process :
A) Take a vessel and add water to it and put the lamb ribs into the water.
B) Add some salt to taste, ginger powder and place it on the stove with a lid covered on the vessel.
C) Keep stirring the mixture once every few minutes to avoid the sticking. Once the ribs boil we’ll take it out and strain the water out.
D) Wait for the ribs to cool down and then cut them into rectangular pieces according to the size required. Put the ribs into a vessel of water again and add cloves, elaichi, zeera, turmeric powder and red chilli powder into it.
E) Cook the ribs in the high flame until they become soft. Once the ribs become soft take them out and put them in a pan with ghee to fry.
F) Keep the flame low while frying the ribs so the ribs be crispy from top and get well cooked and soft from inside. Fry the ribs until they turn golden brown. Take the ribs out and place it on a plate and they are ready to serve.
