South-Ian taste : Bean Poriyal

The southern part of India is not only famous for its culture, heritage, and arts, but they also have mouth-watering dishes. Rich in nutrition’s, full of taste and health. One of them is Poriyal.

Poriyal is a fried, or sometimes sautéed, vegetable dish. It is usually made by shallow frying or diced vegetables along with spices. All poriyals by default have some vegetables and lentils, but many variations of the main vegetable exist:

Bean poriyal:  preparation of bean poriyal takes 15 to 20 minutes.

The ingredients needed are:

  • French Beans – 100 gms
  • Oil – 1 teaspoon
  • Coconut gratings –3 tablespoons
  • Mustard – 1/2 teaspoon
  • Asafetida powder – a pinch
  • Curry Leaves – few
  • Red chili – 3
  • Cumin seeds – 1 teaspoon
  • Salt –as per taste

Preparation of bean poriyal:

bean poriyala) Dice the beans into small pieces.

b) Take coconut, red chilies and cumin and grind it to make a paste.

c) After this, in a pan add the oil and when it is hot add mustard seeds.

d) When the mustard seed pops up add curry leaves and asafetida.

e) Add diced beans pieces with salt and mix it. Add some water.

f) Cook till the vegetable is soft and let the water absorb.

g) Add ground coconut paste and stir well and remove from cooktop.

It can be served as a side dish to a three-course meal of rice with Sāmbhar, rasam and yogurt.When it comes to variation, switching of vegetables can make you a new poriyal dish every time, only you need to be experimental enough. You can also enjoy it for breakfast, as it is easy to make and with less preparation time, also with it health benefits you can start your day with a healthy breakfast.
