Payasam is a South Indian Dish usually used as a dessert. The pudding is made in wide varieties. From using vermicelli, to dry fruits for garnishing. This lip-smacking recipe has milk as a major component. This also uses Jaggery for sweetness.
The other components are like jackfruit, rice, green grams, pumpkin seed, carrot, coconut milk, wheat rava, Phirni (Rice Pudding with Saffron and Nuts), cashew almond, seaweed, banana and semiya (Vermicelli).
In layman language, it’s nothing but a Kheer. The variants are more in this recipe. South Indians, always celebrate their festivals using this dessert as a complementary dish.
They prepare for almost all the auspicious occasions. Raisins and cashew nuts are widely used for garnishing purposes.
For providing sweetness to the pudding, some people use sugar and some uses jaggery. Jaggery is sweetest. It is flavored with cardamom, raisins, saffron, cashews, pistachios or almonds.
