THE ORIGIN OF DEHRORI:

Chattisgarh is an East Indian state carved out of Madhya Pradesh. Chattisgarh is also called the “rice bowl of central India and most of the traditional and tribal foods are made of rice and rice flour, curd and a variety of green leafy vegetables.

So, therefore, when it comes to desserts in Chattisgarh, Dehrori is the best one, usually prepared on Diwali eve. It consists of fried rice dumplings dipped in sugar syrup and garnished with nuts.

WHAT MAKES DEHRORI DELICIOUS?

This delicious dessert is a scrumptious South Indian dessert that owes its origin to Chattisgarh but is popular worldwide with different names. This easy-to-make recipe can be made within 30 minutes using simple ingredients which are rice, cardamom powder, almonds, cashews, yogurt, ghee, lemon juice and sugar.

The mouth-watering recipe consists of fried pan cakes with are coated with a heavenly made sugar syrup and are garnished with nuts. THE INGREDIENTS USED TO MAKE DEHRORI:

1 cup rice

1/2 teaspoon powdered green cardamom

2 tablespoon almonds

2 tablespoon cashews

4 cup sugar

2 tablespoon lemon juice

1/2 cup yoghurt (curd)

3 cup ghee

water as required

THE MAKING OF DEHRORI :

STEP ONE:

Take a bowl and add water and rice in it. Soak the rice in the water for at least 5 to 6 hours. Once done, remove the water from the bowl and retain the rice. Transfer this rice into a mixer jar and grind it into a raw paste. Stir in curd into the rice paste and leave overnight to ferment.

STEP TWO:

In a deep bottomed pan kept on medium flame, add water and sugar. Heat the mixture until you get a syrup-like consistency. Check whether you get a string like texture once you dip a spoon in the mixture. If you do, turn off the flame. Add cardamom powder and lime juice to the sugar syrup and mix.

STEP THREE:

Take a deep bottomed pan, keep it on medium flame, and heat ghee in it. Meanwhile, make small pancakes out of the rice-curd mixture. Gently dip these pancakes in the hot ghee and fry them until golden brown in color.

STEP FOUR:

Immediately transfer the fried pan cakes in the sugar syrup and let it soak the syrup. Once done, garnish the patties with chopped almonds and cashews. Serve!
